だしのこだわり

No chemical seasoning is used. The moldy main section and Soda section are shaved every morning at our shop, and the natural product Rishiri kelp and freshly shaved section are used to make the dashi stock. By adding mold to the knots, the taste is increased and a clear and elegant soup stock can be drawn.




そばのこだわり

Soba is made by grinding domestically produced buckwheat with a stone mill and making it in a ratio of eight buckwheat flour and two buckwheat flour.

It is a buckwheat made only with buckwheat flour and water without using any binder. Please enjoy the spicy soup and the taste of Edo where you can enjoy the original flavor and umami of soba that is simple with salt.

うどんのこだわり

Udon is made from wheat from Aichi prefecture (Kinu Akari), kneaded with salt water made from natural salt, and left to stand overnight to make noodles.

桜えびかき揚げのこだわり

Please enjoy the scent of the shore and the sweetness of the natural raw sakura shrimp that spreads in your mouth with the natural salt of Mongolia.
